Peri Peri Chicken Wings – Portuguese Wings, Oven Baked

Oven baked chicken wings marinated in a delicious Peri Peri marinade. Super easy to make and super tasty to eat. Great as a snack, side dish or party food.

Peri Peri Chicken Wings

These homemade Peri Peri chicken wings are sticky, tasty and roasted in the oven. It is super simple to both make the marinade and to cook the wings. There is so much flavor going on in with these wings. They are a great snack and can be changed up to suit the level of heat you like/can handle.

These wings are gluten-free, dairy-free, egg-free and soy-free so very allergy friendly. Great when catering for lots of people with dietary requirements.

Peri Peri Marinade

For the Peri Peri marinade we need to make a Peri Peri sauce. This Peri Peri sauce will act as the marinade and it is PACKED full of flavor. The sauce is made from a collection of bird’s eye chilies, paprika, garlic, onion powder, lemon, vinegar and a bit of oil.

To make the marinade just chuck all the ingredients in a blender or food processor and pulse until mostly smooth. It is nice to have the marinade a little chunky, but not so chunky you have half a clove of garlic hanging around. Change up the number of chilies in the marinade to suit the level of heat you want.

It can be a a good idea to save some of the marinade to use as a dipping sauce or to use for glazing the chicken wings during the cooking process. However, this is not required as the wings still taste great without it.

Mix about 1/2 a cup of the Peri Peri sauce in with the wings and marinate for at least 1 hour, ideally leave it overnight. If you can’t leave overnight but have some time then I recommend aiming for 3 hours of marinating.

This marinade is amazing with other parts of the chicken as well. I love marinating some chicken breast and pan frying them to use for Peri Peri chicken burgers. I often make a large batch of the Peri Peri sauce so i have some to use when i feel like making something Peri Peri flavored.

Oven Baking Peri Peri Chicken Wings

Oven baking these wing allows for large batches and minimal mess and cleanup. It also makes them low maintenance, as there is no need to turn these wings. Although there is always the option to glaze the wings with some more sauce part way through the cooking process.

No need for a wire rack in this recipe as the marinade doesn’t really burns. A wire rack may be useful if you don’t want the wings to sit in the fat that renders off of the chicken wings, but I find it is fine without it.

Cook the wings in an oven, preheated to 425°F/220°C, for 30-35 minutes. Once the wings are golden and cooked through they are ready to be taken out. Let them cool slightly before eating and serving.

If you have some spare Peri Peri sauce, that hasn’t been in contact with raw chicken, then have a go at dipping or brushing some onto the cooked wings. It really intensifies the Peri Peri flavor of the wings, but some people may find it a bit much.

After coming out of the oven you will find that these Peri Peri chicken wings are nice and sticky and super delicious.

Storing Peri Peri Chicken Wings

For best storage results store the cooked chicken wings in an air tight container or zip lock bag. In the fridge they will last up to 4 days. In the freezer they will last up to 6 months.

A great idea is to add the marinade and wings together in a large zip lock bag, label and date the bag, and then store it in the freezer. This way you have a great snack or appetizer to cook at any time. All you need to do is defrost and then cook the wings.

You can make the marinade ahead of time and store it in an air tight container in the fridge. It will last quite awhile in the fridge due to the acidity of the vinegar and lemon juice.

Substitutions

Substitute the Bird’s eye chilies for some ground cayenne pepper. Roughly 1 tsp per chili should work. Alternatively use any other sort of chili you feel like instead.

You can also substitute the dried oregano for some different dried herbs, such as dried basil.

Ingredients
  

  • 2 lb / 900 g chicken wings split into drumettes and wingettes

Peri Peri Marinade (Note 1)

  • 2 Bird's eye chilies stems removed (Add in more to increase heat)
  • 4 cloves garlic
  • 1/4 cup vegetable oil
  • 1/2 lemon juiced
  • 2 tbsp red wine vinegar
  • 2 tsp smoked paprika or sweet
  • 2 tsp dried oregano
  • 2 tsp onion powder
  • 1 1/2 tsp salt
  • 1 tsp sugar
  • black pepper to taste

Instructions
 

  • Add all marinade ingredients together in a blender or food processor. Pulse until mostly smooth or your desired consistency.
  • Mix about 1/2 a cup of the Peri Peri marinade with the chicken wings in a large bowl or zip lock bag. Marinate in the fridge for at least 1 hour.
  • Preheat oven to 425°F/220°C
  • Line a baking tray with parchment paper and place the marinated chicken wings on it in a single layer.
  • Cook in oven for 30-35 minutes, or until golden and cooked through. Let cool slightly before serving.

Notes

  1. Marinade ingredients will make about 1/2 a cup of marinade. Make a little bit more if you want to use some as a dipping sauce.
