Oven Baked Garlic Butter Chicken Thighs

Garlic butter chicken thighs are a super tasty and indulgent meal. Beautifully cooked chicken thighs, coated in a flavor packed garlic and butter sauce. Super quick and easy to make, which makes for a great dinner any night of the week.

Garlic Butter Chicken Thighs

Garlic butter chicken thighs are super easy to make. The chicken is baked/roasted in the oven. This makes it super convenient to make them, as you just chuck them in to cook whilst doing other things. The garlic butter helps keep the chicken moist and adds lots of flavor to the chicken.

This recipe uses boneless chicken thighs. They do not dry out as easily as chicken breast when baking in the oven and have more flavor. I also use boneless chicken thighs instead of bone-in. They are easier to find in supermarkets and cook quicker in the oven.

Garlic Butter Sauce

The garlic butter sauce is super quick to put together. Simply start by melting the butter in a small fry-pan on medium-low heat. Once the butter is all melted and starting to bubble, add in the garlic and rosemary. Cook it for 1 minute. You don’t want to cook it for too long as we don’t want to burn the butter or the garlic. Take off the heat and that is it, the sauce in now done.

Season your chicken thighs with salt and pepper and lie them in a baking dish. Then simply pour over the sauce. You may want to spoon some of the sauce onto the chicken to ensure it is well covered. Cook the chicken in an oven, preheated to 425°F/220°C, for 20-25 minutes, stopping halfway to flip the chicken thighs and baste with some of the garlic butter in the tray.

What To Serve With Garlic Butter Chicken Thighs

I absolutely adore serving this chicken alongside some mashed potatoes and peas. The garlic butter sauce goes amazing with them and is borderline the best part of the meal.

Another option, that works great as a side, is roast vegetables, such as roast potatoes or roast carrots. Boiled or steamed vegetables are another great option for sides, such as green beans, peas or carrots. They all go great with the garlic butter sauce.

Storage

Cooked chicken thighs are best stored in an air tight container or zip lock bag. They will last in the fridge for up to 4 days, or in the freezer for up to 6 months. It is easiest to store the garlic butter sauce separately, as it will solidify in the fridge, which can make reheating a little interesting.

Ingredients
  

  • 5 chicken thighs boneless and skinless (about 21oz / 600g)
  • salt and pepper to taste

Garlic Butter

  • 1/2 cup unsalted butter
  • 5 cloves garlic minced
  • 1 tsp dried rosemary

Instructions
 

  • Preheat oven to 425°F/220°C
  • Melt butter in a small fry-pan on medium-low heat.
  • Once butter has melted and is bubbling slightly, add in garlic and rosemary. Cook for 1 minute, then turn off the heat.
  • Pat chicken dry and season both sides with salt and pepper. Lie the chicken thighs flat in a baking dish. (Note 1)
  • Pour the cooked garlic butter sauce over the chicken thighs. Place chicken thighs in the oven to cook for 20-25 minutes, turning them halfway and basting with some of garlic butter they are cooking in.
  • Let chicken rest for 5 minutes before serving, pouring over some of the garlic butter sauce from the baking dish.

Notes

  1. The baking dish should be deep enough to hold the garlic butter sauce that is poured over the chicken thighs.
