Italian Style Chicken Wings
These Italian style chicken wings combine lots of Italian flavors together is a wonderful tomato and herby marinade. Making some very tasty wings. These chicken wings are quite allergy friendly. They are dairy-free, gluten-free and egg-free. This makes them a great choice catering for those with allergies.
Oven baking the chicken wings makes it easy to cook in large batches. Oven baking also helps a lot with the cleanup as it produces little mess. These wings make a great appetizer or side dish. They pair well with quite a lot of things. I like to eat mine along with some homemade garlic bread!
Tomato And Herb Italian Style Marinade
Tomato paste, dried herbs, garlic, olive oil, salt and pepper are all used for this marinade. The marinade can be mixed together in a bowl beforehand. However I find that it works just as well adding straight into the chicken wings and mixing in there.
Marinate the chicken wings for at least 1 hour in the fridge. Ideally leave them overnight to develop more flavor. This marinade also works well with other parts of a chicken. It makes a great marinade for chicken breast.
You can change the Italian herbs used in the marinade to suit taste. Using Italian seasoning keeps this recipe extra simple. However if you want to add the herbs in individually then feel free to do so. A simple substitution would be half teaspoon each of dried basil, oregano, rosemary and thyme.
Oven Baking The Wings
This marinade allows for cooking the chicken wings at a relatively high temperature. This will allow the wings to color nicely and will also cook them relatively quickly.
There is no real need for a wire rack when cooking these marinated chicken wings. Using one can help keep the wings off the fat that renders out though. The marinade does not easily burn so a wire rack is not needed with trying to keep the wings away from burnt marinade.
Put the marinated chicken wings in a single layer on a baking tray lined with parchment paper. Put the wings into an oven, preheated to 425°F/220°C, for 30-35 minutes. Let cool slightly before eating.
For some slight variation try a tiny bit of fresh lemon on it.
Storing Italian Chicken Wings
Cooked chicken wings will last up to 4 days in the fridge, when stored in an air tight container. Alternatively they will last in the freezer for up to 6 months.
A great storage idea is to store the chicken wings in the freezer whilst marinating. This will give you a really easy snack to defrost and cook.
The tomato and herb marinade can be made ahead of time. In an air tight container it should last at least a week in the fridge.

Ingredients
- 2 lb / 900 g chicken wings split into wingettes and drumettes
- 3 tbsp tomato paste
- 1 tbsp olive oil
- 2 tsp Italian seasoning
- 1 clove garlic minced
- 1 tsp salt
- 1/4 tsp black pepper or to taste
- 1/4 tsp sugar (optional)
Instructions
- Add all the marinade ingredients together with the chicken wings in a large bowl or zip lock bag. Marinate in the fridge for at least 1 hour.
- Preheat oven to 425°F/220°C
- Line a baking tray with parchment paper. Place marinated wings in a single layer on the parchment paper.
- Cook wings in the oven for 30-35 minutes, or until golden and cooked through. Let cool slightly before serving.
