Teriyaki Glaze

A good teriyaki glaze or sauce is a very versatile thing. It works well as both a marinade and a glaze for lots of different proteins. Works on any cut of chicken, works well with salmon and can even work well on tofu.

This teriyaki glaze has a beautiful balance of savory and sweet. This chicken wing recipe makes a homemade Teriyaki sauce, but you can just as easily follow the recipe and substitute in a store bought Teriyaki sauce.

Making The Teriyaki Glaze

To make the teriyaki glaze you will need a few common ingredients. You will need:

  • 1/3 cup soy sauce
  • 1/4 cup brown sugar packed
  • 2 tbsp honey
  • 1 tbsp rice wine vinegar
  • 2 cloves garlic minced
  • 1/2 tbsp sesame seeds
  • 1 tbsp cornstarch
  • 2 tbsp water

The cornstarch and water and used to make a mixture that will thicken up the teriyaki and make it more of a glaze texture. It makes the glaze stick to the chicken wings much better, without having to simmer for ages.

To make the glaze, add all of the ingredients, besides the sesame seeds, cornstarch and water, together in a small saucepan on medium heat. Let the mixture come to a simmer, stirring occasionally and let simmer for 3-5 minutes to let it thicken. You want to be stirring to avoid the sugars in the glaze from burning.

Meanwhile, mix the cornstarch and water together in a small bowl to make a mixture. Add this mixture into the saucepan, along with the sesame seed. Stir it all together and let the mixture come back to a simmer. Let the glaze simmer for a bit longer, it should begin to thicken up and go a nice glossy color.

Once the glaze starts to look like a thick syrup it is ready. Take it off the heat. It will continue to thicken slightly as it cools.

Air Frying Chicken Wings

To start cooking the chicken wings, start by preheating the air fryer to 375°F/190°C. It is important that the air fryer is preheated. This will result in chicken wings with maximum crispiness of chicken wings.

In a bowl or bag, combine the chicken wings with some baking powder (NOT baking soda) and a bit of salt. Place them in a single layer in the air fryer and cook for 20-24 minutes, turning halfway. Once the chicken wings are golden and crispy they are done.

Try not to overcrowd the air fryer. Overcrowding can result in the chicken wings not becoming as crispy. I probably slightly overcrowded the chicken wings in my air fryer, or had it very borderline. This can be seen in the picture below, where some of the chicken wings are slightly touching

Once cooked and crispy toss them in some of the teriyaki glaze. You can serve them as if after that, or you can put them back in the air fryer at 400°F/200°C for another 2-3 minutes. This will make the glaze become really nice and sticky on the chicken wings.

Serve the teriyaki chicken wings warm, garnish with some extra sesame seeds and/or sliced spring onion if desired.

Storage

Cooked chicken wings should be kept in an airtight container in the fridge or freezer. In the fridge they should last up to 4 days. In the freezer they should last up to 6 months.

The Teriyaki sauce can really easily be made ahead of time and stored in the fridge. Keep it in a bottle, container or jar. It is safe to keep in the fridge for up to a week.

To reheat the chicken wings from the fridge, it is best to use an air fryer again. 4-6 minutes in the air fryer, preheated to 350°F/180°C, should be enough to heat them through.
