Mix flour and salt together in a large bowl. Add in hot water and oil. Mix together and knead dough until smooth. Should only need a minute or two of kneading.
Cover and let rest for at least 15 minutes.
Split dough into 8 equal portions and form into small balls.
Heat a frying pan on medium heat without oil.
Dust work surface if needed and roll out a ball of dough into a circle roughly 8 inches (20cm) in diameter.
Cook the tortilla in the frying pan for 45 seconds to 1 minute then flip and cook another 30 to 45 seconds. Stack in a folded over towel to cool.
Repeat rolling out and cooking with remaining dough balls.
