Garlic Butter
1/2cupunsalted butter
5clovesgarlicminced
1tspdried rosemary
Instructions
Preheat oven to 425°F/220°C
Melt butter in a small fry-pan on medium-low heat.
Once butter has melted and is bubbling slightly, add in garlic and rosemary. Cook for 1 minute, then turn off the heat.
Pat chicken dry and season both sides with salt and pepper. Lie the chicken thighs flat in a baking dish. (Note 1)
Pour the cooked garlic butter sauce over the chicken thighs. Place chicken thighs in the oven to cook for 20-25 minutes, turning them halfway and basting with some of garlic butter they are cooking in.
Let chicken rest for 5 minutes before serving, pouring over some of the garlic butter sauce from the baking dish.
Notes
The baking dish should be deep enough to hold the garlic butter sauce that is poured over the chicken thighs.
